A 62-cover restaurant fit-out inside a conserved shophouse, built to satisfy conservation guidelines and a commercial kitchen code at once.

The brief

URA conservation status meant the shopfront and party walls were untouchable. Inside, the operator needed a full commercial kitchen, grease trap, and exhaust run that a century-old shophouse was never built for.

Our approach

We routed new exhaust ductwork through a rebuilt rear stair core rather than the historic facade, keeping the conservation approval straightforward. Kitchen equipment was sequenced to arrive after the grease trap install but before the finishes — the one ordering mistake that, done wrong, costs a fit-out its opening date.

The result

The restaurant opened on schedule for its booked launch event, with NEA and SCDF sign-off cleared in a single inspection round.
